Collard greens are one of my favorite green leafy vegetables to cook and they never fail to deliver on taste and nutrition. Their hearty, slightly earthy flavor shines whether sautéed with garlic or simmered in a savory broth, making them a versatile swap for less nutrient rich sides. Packed with dietary fiber, collard greens support digestive health and keep me feeling full and energized, much like the spinach and kale in my green veggie combo or the iron-rich beetroot I add to smoothies. They’re also rich in vitamins A, C, and K, adding to their wholesome appeal. I enjoy preparing them as a side for hearty dishes like my grass fed beef blend or as a main attraction in a plant based meal. Easy to cook and deeply nourishing, collard greens are a staple for delicious, fiber filled eating.
